Chicken Karahi Recipe? All You Need to Know

Chicken Karahi is a rich, flavorful, and spicy Pakistani and North Indian dish cooked in a wok-style pan called a “karahi.” It features tender chicken cooked in a thick tomato-based gravy with aromatic spices, ginger, garlic, and green chilies. Traditionally, it is prepared with minimal water, allowing the ingredients to release their natural juices and enhance the dish’s deep, savory taste.

Ingredients:

  • 1 kg chicken (cut into medium pieces)
  • 4 medium tomatoes (chopped or blended)
  • 2 medium onions (finely sliced)
  • 3-4 green chilies (slit)
  • 1/4 cup yogurt (optional, for a creamier texture)
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1/2 cup cooking oil or ghee
  • 1 teaspoon red chili powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala powder
  • 1 teaspoon salt (adjust to taste)
  • 1 teaspoon crushed dried fenugreek leaves (Kasuri methi)
  • Fresh coriander leaves (chopped, for garnish)
  • 1 tablespoon fresh ginger (julienned, for garnish)

Instructions:

Heat Oil & Sauté Spices:

    • Heat oil in a large karahi or wok over medium heat.
    • Add cumin seeds and let them crackle for a few seconds.

  1. Saute Chicken & Onions:

    • Add the chicken pieces and sauté for 5-7 minutes until they turn golden brown.
    • Add sliced onions and cook until they turn soft and light golden.
  2. Add Ginger & Garlic:

    • Stir in the ginger and garlic paste and sauté for another minute until fragrant.
  3. Add Tomatoes & Spices:

    • Add the chopped or blended tomatoes and cook on medium heat for 10-12 minutes until the oil starts to separate.
    • Stir in salt, red chili powder, Kashmiri chili powder, turmeric, coriander powder, and black pepper.
    • Mix well and let it cook for another 5 minutes.
  4. Incorporate Yogurt (Optional) & Simmer:

    • If using, add the yogurt and mix well. Let it simmer for 5-7 minutes until the gravy thickens.
  5. Add Green Chilies & Finishing Touches:

    • Add green chilies, garam masala, and crushed fenugreek leaves. Stir well and let the karahi simmer for another 5 minutes.
  6. Garnish & Serve:

    • Sprinkle fresh coriander leaves and ginger juliennes on top.
    • Drizzle a few drops of lemon juice for extra tanginess.
